Greek Chicken Gyros – Homemade Tzatziki Included!

For the Chicken Marinade:

1.5 lbs boneless, skinless chicken thighs (or breasts)

4 cloves garlic, minced

2 tsp dried oregano

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp black pepper

1 tsp salt

Juice of 1 large lemon

2 tbsp olive oil

For the Tzatziki Sauce:

1 cup Greek yogurt

1 cucumber, grated and excess water squeezed out

2 cloves garlic, minced

1 tbsp fresh dill, chopped (or 1 tsp dried dill)

1 tbsp olive oil

1 tbsp white vinegar or lemon juice

Salt and pepper to taste

For Assembly:

4 large pita or flatbreads

Sliced tomatoes

Sliced red onion

Shredded lettuce

Lemon wedges (for serving)

Instructions
 

Marinate the Chicken:

    - In a bowl, combine minced garlic, oregano, cumin, smoked paprika, black pepper, salt, lemon juice, and olive oil. Mix until well blended.

      - Add the chicken, ensuring it is thoroughly coated in the marinade. Cover and refrigerate for at least 2 hours (or overnight for best flavor).

        Prepare the Tzatziki Sauce:

          - In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, olive oil, and vinegar or lemon juice.

            - Mix well, then season with salt and pepper to taste. Cover and refrigerate until ready to serve, to allow flavors to meld.

              Cook the Chicken:

                - Preheat a grill or skillet over medium-high heat. Remove chicken from marinade and grill or pan-sear for about 5-7 minutes per side, or until cooked through and juices run clear.

                  - Once cooked, let the chicken rest for a few minutes, then slice it thinly.

                    Assemble the Gyros:

                      - Warm the pita or flatbreads on the grill or in a dry skillet for about 30 seconds on each side.

                        - To each pita, add a portion of sliced chicken, followed by tomatoes, red onion, and lettuce.

                          - Top generously with tzatziki sauce and a squeeze of lemon juice.

                            Serve:
