Ingredients

1 cup red seedless grapes, halved

1 cup green seedless grapes, halved

1 cup sharp cheddar cheese, cubed

1 cup goat cheese, crumbled

1/2 cup walnuts, toasted and roughly chopped

1/4 cup fresh mint leaves, sliced thin

3 tablespoons honey

1 tablespoon balsamic vinegar

1 tablespoon olive oil

Salt and pepper to taste

Endive leaves or small cucumber cups for serving

Instructions

Prepare the Base: If using endive leaves, separate them gently and set aside. If using cucumbers, cut them into 2-inch segments and hollow them out slightly to form cups.

Mix the Salad: In a large bowl, combine the halved red and green grapes, cubed cheddar cheese, crumbled goat cheese, and toasted walnuts.

Make the Dressing: In a small bowl, whisk together the honey, balsamic vinegar, olive oil, and a pinch of salt and pepper until well blended.

Combine: Pour the dressing over the grape and cheese mixture. Gently toss until everything is well coated.

Add Freshness: Fold in the sliced mint leaves, ensuring they are evenly distributed throughout the salad.

Serve: Spoon the mixture into the endive leaves or cucumber cups. Arrange on a serving platter for an elegant presentation.

Garnish: Optionally, drizzle a little extra honey or balsamic reduction over the top for added flair.

Enjoy: Serve immediately, or refrigerate for up to 30 minutes before serving to let flavors meld.
