2 cups all-purpose flour

1 cup old-fashioned oats

1 cup brown sugar, packed

1/2 cup granulated sugar

1 cup unsalted butter, melted and slightly cooled

1/2 teaspoon salt

1 teaspoon vanilla extract

1 teaspoon baking powder

1/4 teaspoon ground cinnamon

1 1/2 cups fig jam (store-bought or homemade)

1/2 cup chopped walnuts or pecans (optional)

Powdered sugar for dusting (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan or line it with parchment paper for easier removal.

    Mix Dry Ingredients: In a large bowl, combine the flour, oats, brown sugar, granulated sugar, salt, baking powder, and cinnamon. Stir until well combined.

      Add Wet Ingredients: Pour the melted butter and vanilla extract into the dry mixture. Stir with a wooden spoon or spatula until a crumbly dough forms. The mixture should have some larger clumps, which will create a nice texture.

        Reserve the Crust: Set aside about 1 cup of the mixture for topping. Press the remaining mixture evenly into the bottom of the prepared baking pan to form the crust.

          Spread the Fig Jam: Smoothly spread the fig jam over the crust, leaving a small border around the edges. If you're adding nuts, sprinkle them evenly on top of the fig jam.

            Add the Topping: Crumble the reserved crust mixture evenly over the fig jam. Don’t worry about covering it completely; little gaps are fine. The topping will create a delightful texture as it bakes.

              Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the top is lightly golden brown and the edges are bubbling.

                Cool and Cut: Remove from the oven and allow to cool in the pan for at least 15 minutes. Then, lift out the bars using the parchment paper (if lined) and let them cool completely on a wire rack. Once cooled, cut into squares or rectangles.

                  Serve: Dust with powdered sugar before serving, if desired, for a touch of sweetness and decoration.
