Ingredients
  

For the Pie Dough:

2 ½ cups all-purpose flour

1 tsp salt

1 tbsp sugar

1 cup unsalted butter, chilled and diced

6-8 tbsp ice water

For the Apple Filling:

3 medium Granny Smith apples, peeled, cored, and diced

½ cup brown sugar

1 tsp ground cinnamon

¼ tsp ground nutmeg

1 tbsp lemon juice

1 cup caramel sauce (store-bought or homemade)

For Assembly:

1 egg (beaten, for egg wash)

Extra sugar for sprinkling (optional)

Instructions
 

Prepare the Pie Dough:

    - In a large mixing bowl, combine the flour, salt, and sugar.

      - Add the chilled butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

        - Stir in the ice water, one tablespoon at a time, until the dough begins to come together.

          - Divide the dough into two equal balls, flatten them into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

            Make the Apple Filling:

              - In a medium bowl, combine the diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Toss until the apples are coated.

                - Let the mixture sit for about 10-15 minutes to allow the apples to release some juices.

                  Roll Out the Dough:

                    - Preheat your oven to 375°F (190°C) and line a baking tray with parchment paper.

                      - On a floured surface, roll out one disk of dough to about ⅛-inch thickness.

                        - Use a round cutter (approximately 4-5 inches in diameter) to cut out circles. Repeat with the second disk of dough.

                          Assemble the Hand Pies:

                            - Place a tablespoon of the apple mixture in the center of each dough circle, leaving a small border around the edge.

                              - Drizzle a teaspoon of caramel sauce on top of the apple filling.

                                - Brush the edges of each circle with the beaten egg. Fold over, sealing the edges by crimping with a fork or pinching by hand.

                                  - Make a few small slits on the top of each hand pie to allow steam to escape.

                                    Bake the Hand Pies:

                                      - Transfer the assembled pies onto the prepared baking tray.

                                        - Brush the tops with the remaining beaten egg and sprinkle with sugar, if desired.

                                          - Bake in the preheated oven for 25-30 minutes, or until the pies are golden brown.
