2 medium zucchinis, sliced into 1/4 inch rounds

1 cup finely grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper, to taste

2 large eggs, beaten

1 tablespoon olive oil (for drizzling)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easier cleanup.

    Prepare the Breading Station: In one bowl, combine the breadcrumbs, half of the grated Parmesan cheese, garlic powder, Italian herbs, salt, and pepper. In another bowl, beat the eggs.

      Coat the Zucchini: Dip each zucchini round first in the beaten eggs, allowing any excess to drip off. Then, coat it in the breadcrumb mixture, pressing lightly to ensure the crumbs stick.

        Arrange on Baking Sheet: Place the breaded zucchini rounds on the prepared baking sheet. Arrange them in a single layer, making sure they don’t touch each other to ensure even cooking.

          Add Olive Oil: Drizzle a small amount of olive oil over the zucchini bites for added crispiness. You can use a brush or your fingers to lightly coat the tops.

            Bake: Bake in the preheated oven for 20-25 minutes, or until the zucchini bites are golden brown and crispy. Halfway through, you may want to flip them for even browning.
