2 medium zucchinis, sliced into thin rounds (about 1/4 inch)

1 cup grated Parmesan cheese

1 cup breadcrumbs (Panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (oregano, basil, or thyme)

1/2 teaspoon paprika

Salt and pepper to taste

2 large eggs, beaten

Olive oil spray or a drizzle of olive oil

Preheat the Oven: Preheat your oven to 425°F (220°C). Line two baking sheets with parchment paper for easy cleanup.

    Prepare the Zucchini: Wash and slice the zucchinis into thin rounds. For a crisper texture, you can sprinkle the slices with salt and let them sit for about 15 minutes to draw out moisture. Pat them dry with paper towels.

      Create the Coating: In a shallow bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, dried herbs, paprika, salt, and pepper. Mix well to ensure an even distribution of seasoning.

        Egg Wash: In another bowl, whisk the two beaten eggs until well mixed.
