Golden Parmesan Roasted Carrot Ribbons

4 large carrots, peeled

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

½ cup freshly grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Zest of 1 lemon

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Carrots: Using a vegetable peeler, carefully peel the carrots into long, thin ribbons. If the carrots start to get too thin, simply cut them into even strips using a knife.

      Season the Carrots: Place the carrot ribbons into a large mixing bowl. Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, salt, and black pepper. Toss the carrots gently until they are well-coated with the seasonings.

        Roast the Carrots: Spread the seasoned carrot ribbons evenly on the prepared baking sheet. Make sure to keep them in a single layer for even roasting. Bake in the preheated oven for 15-20 minutes, or until the carrots are tender and slightly caramelized, flipping halfway through.

          Add Parmesan: Remove the baking sheet from the oven. Sprinkle the grated Parmesan cheese over the hot carrot ribbons and return to the oven for an additional 5 minutes, or until the cheese is melted and golden brown.
