Ingredients

1 cup coarsely ground polenta (cornmeal)

4 cups vegetable broth or water

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 cup grated Parmesan cheese (optional for a cheesy flavor)

Fresh herbs (like rosemary or thyme) for garnish

Optional dipping sauces (like marinara or aioli)

Instructions

Cook the Polenta: In a medium saucepan, bring the vegetable broth (or water) to a boil. Gradually whisk in the polenta, making sure to stir continuously to prevent lumps. Reduce the heat to low and cook for about 5-7 minutes, continuously stirring until it becomes thick and creamy.

Season the Mixture: Once the polenta has thickened, stir in the olive oil, salt, garlic powder, smoked paprika, and black pepper. If you're using Parmesan cheese, mix it in at this stage for a cheesy flavor.

Set the Polenta: Pour the cooked polenta into a lightly greased 9x13 inch baking dish, spreading it evenly to about 1-inch thickness. Use a spatula to smooth the surface. Refrigerate for at least 1 hour (or overnight) to set.

Prepare for Frying: After the polenta has set, preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easier cleanup.

Cut the Fries: Once the polenta is firm, invert the baking dish onto a cutting board to release the polenta. Cut the polenta into fry-shaped sticks, about 1/2 inch thick.

Bake the Fries: Arrange the polenta fries on the prepared baking sheet in a single layer. Lightly drizzle or spray with olive oil, ensuring they are evenly coated. Bake in the preheated oven for about 25-30 minutes, flipping halfway through, until the fries are golden brown and crispy.

Garnish and Serve: Once baked, remove from the oven and let cool for a few minutes. Garnish with fresh herbs if desired and serve hot with your choice of dipping sauces like marinara or aioli.
