4 medium-sized Yukon Gold potatoes, peeled and diced

1 large onion, chopped

2 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup heavy cream

2 tablespoons olive oil

1 teaspoon caraway seeds

Salt and pepper to taste

1 cup diced carrots

1 cup diced celery

Fresh chives, chopped (for garnish)

Optional: crispy bacon bits (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened.

    Stir in the minced garlic and caraway seeds, cooking for an additional 1-2 minutes until fragrant.

      Add the diced potatoes to the pot, followed by the vegetable or chicken broth. Bring to a boil, then reduce the heat to a simmer. Cover and cook for 15-20 minutes, or until the potatoes are tender.

        Once the potatoes are cooked, use an immersion blender to puree the soup until smooth. If a smoother texture is desired, you can blend in batches using a traditional blender.

          Stir in the heavy cream, and season with salt and pepper to taste. Allow the soup to simmer for an additional 5 minutes to warm through.

            Serve hot in bowls, garnishing with fresh chives and optional crispy bacon bits for extra flavor.
