2 large sweet potatoes

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Optional: 1 teaspoon red pepper flakes (for a kick)

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Sweet Potatoes: Wash and peel the sweet potatoes. Using a spiralizer, create long spirals from the sweet potatoes. If you don’t have a spiralizer, you can use a vegetable peeler to create thin ribbons or slices.

      Make the Garlic Oil Mixture: In a small bowl, whisk together the olive oil, minced garlic, oregano, smoked paprika, salt, and black pepper. If you like a little heat, add the red pepper flakes.

        Toss the Spirals: In a large mixing bowl, combine the sweet potato spirals with the garlic oil mixture. Toss well to ensure the spirals are evenly coated.

          Spread on Baking Sheet: Transfer the coated sweet potato spirals onto the prepared baking sheet. Spread them out in a single layer for even cooking.
