Ingredients

4 bone-in, skin-on chicken thighs

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped (or 1 tablespoon dried parsley)

1 teaspoon Italian seasoning

½ teaspoon salt

½ teaspoon black pepper

¼ cup unsalted butter, melted

1 tablespoon olive oil

Optional: Lemon wedges for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easier cleanup.

Prepare the Parmesan Mixture: In a mixing bowl, combine the grated Parmesan cheese, breadcrumbs, minced garlic, parsley, Italian seasoning, salt, and black pepper. Mix well to ensure even distribution of the ingredients.

Prepare the Chicken: Pat the chicken thighs dry with paper towels. This will help the skin get crispy.

Coat the Chicken: In a separate bowl, mix together the melted butter and olive oil. Dip each chicken thigh into the butter mixture, allowing any excess to drip off. Then, press the skin side of the chicken into the Parmesan-breadcrumb mixture to coat it evenly. Make sure to press down firmly so the coating sticks well.

Arrange on Baking Sheet: Place the coated chicken thighs skin-side up on the prepared baking sheet. Ensure they are spaced apart for even cooking.

Bake the Chicken: Bake in the preheated oven for about 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is golden and crispy.

Broil (Optional): For extra crispiness, turn on the broiler for the last 2-3 minutes of cooking. Keep a close eye on it, as broiling can quickly burn the coating.

Rest and Serve: Once cooked, remove the chicken from the oven and let it rest for 5 minutes. Serve with lemon wedges on the side for a burst of freshness.
