2 cups penne pasta

2 cups cooked chicken, shredded

1 tablespoon olive oil

4 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

2 cups spinach leaves, fresh (optional)

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

      Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

        Add Chicken and Spinach: To the skillet, add the shredded cooked chicken, dried Italian herbs, and fresh spinach leaves. Sauté until the spinach wilts, about 3-4 minutes.

          Make the Sauce: Pour in the heavy cream and chicken broth; stir to combine. Add half of the grated Parmesan cheese and season with salt and pepper. Simmer for about 5 minutes, allowing the sauce to thicken slightly.

            Combine Pasta and Sauce: In a large mixing bowl, combine the cooked pasta with the chicken and sauce mixture. Stir until all the pasta is well coated.

              Prepare Baking Dish: Transfer the pasta mixture to a greased 9x13 inch baking dish. Evenly spread it out.
