Garlic Parmesan Chicken Meatloaves

1 lb ground chicken

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup onion, finely chopped

1 large egg

1 tsp Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

1/4 cup ketchup

2 tbsp olive oil

1/4 cup milk (or chicken broth for extra flavor)

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Mixture: In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, minced garlic, chopped parsley, finely chopped onion, egg, Italian seasoning, salt, and black pepper. Mix well until all ingredients are fully incorporated.

      Add Liquid: Pour in the milk (or chicken broth), mixing gently until the meatloaf mixture is moist but not overly wet. If it's too dry, add a tad more milk/broth.

        Shape the Meatloaves: Using your hands, form the mixture into small, individual meatloaf shapes (approximately 2-3 inches high) and place them on the prepared baking sheet.

          Top with Ketchup: Spread a thin layer of ketchup on top of each meatloaf for added moisture and flavor.

            Bake: Drizzle the olive oil over the meatloaves, then place the baking sheet in the preheated oven. Bake for 25-30 minutes or until the meatloaves are cooked through and golden brown on the outside.

              Check for Doneness: Use a meat thermometer to ensure the internal temperature has reached 165°F (75°C) for food safety.
