Garlic Parmesan Brussels Sprouts – So Crispy!

1 lb Brussels sprouts, trimmed and halved

4 tbsp olive oil, divided

4 cloves garlic, minced

½ cup grated Parmesan cheese

½ tsp salt

¼ tsp black pepper

¼ tsp red pepper flakes (optional, for a kick)

2 tbsp lemon juice

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C).

    Prepare Brussels Sprouts: In a large bowl, combine the halved Brussels sprouts with 2 tablespoons of olive oil, minced garlic, salt, black pepper, and red pepper flakes. Toss everything together until the Brussels sprouts are evenly coated.

      Arrange on Baking Sheet: Spread the coated Brussels sprouts in a single layer on a baking sheet lined with parchment paper. Ensure there's some space between each sprout for optimal crispiness.

        Roast: Place the baking sheet in the preheated oven and roast for 20-25 minutes, stirring halfway through. The Brussels sprouts should be tender on the inside and deep golden brown on the outside.

          Add Cheese: Once roasted, remove the tray from the oven, and immediately sprinkle the grated Parmesan cheese over the hot Brussels sprouts. Drizzle with the remaining 2 tablespoons of olive oil and the lemon juice for added brightness. Toss gently to combine.

            Broil for Crispiness: Switch your oven to broil mode. Return the Brussels sprouts to the oven and broil for an additional 2-3 minutes, or until the cheese is bubbly and lightly browned. Keep a close eye on them to prevent burning.

              Garnish: Remove from the oven and garnish with freshly chopped parsley.
