Zest of 1 lemon

Juice of 1 lemon

1 tablespoon fresh parsley, chopped

1 tablespoon fresh basil, chopped

2 cups cooked quinoa or brown rice

1 cup cherry tomatoes, halved

1 avocado, sliced

Optional: ¼ cup feta cheese, crumbled

Instructions

Prepare the Shrimp: In a large bowl, combine the shrimp with 2 tablespoons of olive oil, minced garlic, red pepper flakes, smoked paprika, salt, and pepper. Toss well to ensure all the shrimp are coated in the mixture. Let it marinate for about 15 minutes.

Assemble the Bowls: In each serving bowl, place a generous scoop of cooked quinoa or brown rice. Top with the sautéed garlic herb shrimp, halved cherry tomatoes, and avocado slices.

Optional Topping: If desired, sprinkle crumbled feta cheese over the bowls for an extra burst of flavor.
