2 cups broccoli florets

2 cups cauliflower florets

1 cup bell peppers (red, yellow, or orange) sliced

1 cup carrots, sliced into thin rounds

1 cup zucchini, sliced into half-moons

4 cloves garlic, minced

2 tablespoons fresh thyme leaves (or 1 tablespoon dried thyme)

2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried rosemary)

1 teaspoon salt

½ teaspoon black pepper

3 tablespoons olive oil

Juice of 1 lemon

Optional garnish: Fresh parsley, chopped

Preheat the Oven: Preheat your oven to 425°F (220°C) to ensure the vegetables roast perfectly.

    Prepare the Vegetables: In a large bowl, combine the broccoli, cauliflower, bell peppers, carrots, and zucchini.

      Mix the Seasoning: In a separate small bowl, whisk together the minced garlic, thyme, rosemary, salt, black pepper, olive oil, and lemon juice until well combined.
