Ingredients

8 oz (225 g) mixed mushrooms (cremini, shiitake, and button), sliced

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)

Salt and pepper, to taste

1 tablespoon balsamic vinegar

1/4 cup cream cheese, softened

1/4 cup grated Parmesan cheese

4 slices of crusty bread (like sourdough or baguette)

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Mushrooms: In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes until they release their moisture and begin to brown.

Add Herbs and Garlic: Stir in the minced garlic, thyme, and rosemary. Cook for an additional 2-3 minutes until the garlic is fragrant, being careful not to let it burn.

Season and Finish: Add salt, pepper, and balsamic vinegar to the mushroom mixture. Stir to combine and cook for another minute. Remove from heat and set aside.

Prepare the Toast: Preheat your oven's broiler. Place the sliced bread on a baking sheet and toast under the broiler for about 1-2 minutes per side, until golden brown and crispy. Keep a close eye to avoid burning.

Mix Cream Cheese and Parmesan: In a small bowl, combine the softened cream cheese and grated Parmesan cheese until well blended.

Assemble the Toasts: Spread a generous layer of the cream cheese mixture on each slice of toasted bread. Then, top with the sautéed mushroom mixture evenly divided among the slices.

Garnish and Serve: Finish with a sprinkle of fresh parsley on each toast for a pop of color and flavor. Serve immediately while warm.
