Garlic Butter Steak and Potatoes

For the Steak:

2 ribeye steaks (1-inch thick)

Salt and black pepper, to taste

2 tablespoons vegetable oil

4 tablespoons unsalted butter

4 cloves garlic, minced

2 sprigs fresh rosemary (or thyme)

For the Potatoes:

1 pound baby potatoes, halved

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes:

    Preheat your oven to 425°F (220°C). In a large bowl, toss the halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.

      Roast the Potatoes:

        Spread the seasoned potatoes in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until they are golden brown and fork-tender, flipping halfway through.

          Season the Steaks:

            While the potatoes are roasting, take the ribeye steaks out of the fridge and let them come to room temperature (about 30 minutes). Season both sides generously with salt and black pepper.

              Cook the Steaks:

                In a large cast-iron skillet, heat the vegetable oil over medium-high heat until shimmering. Carefully place the steaks in the hot skillet and sear for 4-5 minutes on each side for medium-rare, depending on the thickness.

                  Add Garlic and Herbs:

                    During the last 2 minutes of cooking, add the butter, minced garlic, and rosemary (or thyme) to the skillet. Tilt the skillet towards you, allowing the melted butter to pool, and use a spoon to baste the steaks with the garlic butter continuously.

                      Rest the Steaks:
