Garlic Butter Shrimp Scampi Lasagna

12 lasagna noodles

1 lb large shrimp, peeled and deveined

4 tbsp unsalted butter

4 cloves garlic, minced

1/2 cup white wine (or chicken broth)

1 tbsp lemon juice

1 tsp lemon zest

1/4 tsp red pepper flakes

Salt and black pepper, to taste

1 cup ricotta cheese

1 1/2 cups shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

2 tbsp chopped fresh parsley, for garnish

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Lasagna Noodles: Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

      Sauté Shrimp: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the shrimp, red pepper flakes, salt, and pepper. Cook until shrimp are pink and opaque, about 3-5 minutes. Remove shrimp and set aside.

        Deglaze and Make Sauce: In the same skillet, add the white wine (or chicken broth) and lemon juice. Scrape the bottom of the skillet to deglaze. Let it simmer for 2-3 minutes until slightly reduced. Stir in the remaining butter, lemon zest, and shrimp back into the mixture. Mix well, then remove from heat.

          Prepare the Cheese Mixture: In a bowl, combine the ricotta cheese, half of the mozzarella cheese, and salt and pepper to taste. Mix until smooth.

            Layer the Lasagna: In a 9x13 inch baking dish, spread a spoonful of the shrimp scampi sauce on the bottom. Layer 4 noodles on top, followed by half of the ricotta mixture, half of the shrimp mixture, and a sprinkle of remaining mozzarella. Repeat the layering process again. Finish with the final layer of noodles, the remaining shrimp sauce, and sprinkle the top with Parmesan and the remaining mozzarella cheese.

              Bake: Cover with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes until the top is bubbly and golden.

                Garnish and Serve: Let the lasagna sit for 10 minutes before slicing. Garnish with fresh parsley and serve warm.
