1 lb large shrimp, peeled and deveined

1 cup jasmine rice, rinsed and drained

3 cups low-sodium chicken or vegetable broth

4 tablespoons unsalted butter

4 cloves garlic, minced

1 small onion, finely chopped

1 bell pepper (red or yellow), diced

1 teaspoon smoked paprika

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

1 lemon, juiced

1 teaspoon lemon zest

Instructions
 

Cook the Rice: In a large skillet, add 1 tablespoon of butter and melt it over medium heat. Add the rinsed jasmine rice and toast it for about 2-3 minutes, stirring constantly until slightly golden. Pour in the chicken broth and bring it to a boil. Cover, reduce the heat to low, and let it simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed. Remove from heat.

    Sauté the Aromatics: In the same skillet, push the cooked rice to one side. In the cleared space, add the remaining 3 tablespoons of butter. Once melted, add minced garlic and chopped onion. Sauté for 2-3 minutes until the onion is translucent and the garlic is fragrant.

      Add the Bell Pepper: Stir in the diced bell pepper and cook for another 2-3 minutes, until it softens.

        Season the Shrimp: In a bowl, lightly toss the shrimp with smoked paprika, red pepper flakes, salt, and black pepper.

          Cook the Shrimp: Push the rice and veggies to the side again and add the seasoned shrimp to the skillet. Cook for 2-3 minutes on each side until shrimp turn pink and opaque. Be careful not to overcook them.

            Combine Everything: Once the shrimp are cooked, stir everything together in the skillet. Add lemon juice and lemon zest to enhance the flavors. Adjust seasoning with additional salt and pepper if needed.
