Ingredients

4 salmon fillets (6 oz each)

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 tablespoon fresh lemon juice

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 zucchini, thinly sliced

1 lemon, sliced into rounds

Fresh parsley, chopped (for garnish)

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C).

Prepare Foil: Lay out four large pieces of aluminum foil (about 12x18 inches). This will create individual packs for each salmon fillet.

Make Garlic Butter: In a small bowl, whisk together the melted butter, minced garlic, lemon juice, oregano, paprika, salt, and pepper until well combined.

        Assemble Packs:

          - Place one salmon fillet in the center of each piece of foil.

            - Drizzle each fillet generously with the garlic butter mixture.

              - Arrange halved cherry tomatoes and sliced zucchini around the salmon.

                - Top each salmon fillet with lemon slices for added flavor.

Seal the Pack: Carefully fold the edges of the foil over to create a sealed packet, making sure it’s tightly closed to keep the steam in.

Bake: Place the foil packs on a baking sheet and transfer them to the preheated oven. Bake for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

Serve: Carefully unwrap the foil packs (be cautious of steam), and serve the salmon with the veggies, garnished with fresh parsley.

Enjoy: Pair with your favorite side dish like rice, quinoa, or a fresh salad for a wholesome meal!
