Ingredients

1 large head of cauliflower, cut into florets

1/2 cup unsalted butter, melted

6 cloves garlic, minced

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 teaspoon smoked paprika

1/2 teaspoon red pepper flakes (optional, for a bit of heat)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper for easy cleanup.

Prepare the Cauliflower: In a large mixing bowl, combine the cauliflower florets with the melted butter, minced garlic, lemon juice, lemon zest, thyme, smoked paprika, red pepper flakes, salt, and pepper. Toss everything together until the cauliflower is evenly coated with the garlic butter mixture.

Spread on Baking Sheet: Transfer the seasoned cauliflower florets to the prepared baking sheet in a single layer. Make sure the florets are not overcrowded to allow for even roasting.

Roast the Cauliflower: Place the baking sheet in the preheated oven and roast for 25-30 minutes, tossing halfway through. The cauliflower should be golden brown and tender when done.

Garnish and Serve: Remove from the oven and let it cool for a few minutes. Sprinkle fresh parsley on top and add a sprinkle of grated Parmesan cheese if desired. Serve warm.

Enjoy: This dish pairs perfectly with grilled meats or can be enjoyed as a hearty vegetarian entree on its own!
