4 medium-sized Russet potatoes

1/2 cup unsalted butter (1 stick), melted

4 cloves garlic, minced

1 teaspoon fresh rosemary, finely chopped (or 1/2 teaspoon dried)

1 teaspoon fresh thyme, finely chopped (or 1/2 teaspoon dried)

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Optional: sour cream or Greek yogurt (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prep the Potatoes: Scrub the potatoes under cold running water and pat them dry with a towel. Using a sharp knife, make deep cuts along the length of each potato, about 1/8 inch apart. Be careful not to cut all the way through; leave about 1/4 inch intact at the bottom to hold the potato together.

      Make the Garlic Butter Mixture: In a small bowl, combine the melted butter, minced garlic, rosemary, thyme, salt, and black pepper. Mix well to infuse the flavors.

        Butter the Potatoes: Place the prepared potatoes on the lined baking sheet. Carefully drizzle or brush the garlic butter mixture generously over each potato, making sure to get some of the mixture into the slits.

          Roast the Potatoes: Transfer the baking sheet to the preheated oven and roast the potatoes for about 45-50 minutes, or until the potatoes are crispy on the outside and tender on the inside. Halfway through roasting, baste the potatoes with the remaining garlic butter.

            Add the Cheese: About 10 minutes before the potatoes are done, remove them from the oven and sprinkle the grated Parmesan cheese over the top, ensuring it gets into some of the slits for extra flavor. Return to the oven and continue baking until the cheese is golden and melted.

              Garnish and Serve: Once the potatoes are cooked to perfection, remove them from the oven. Let them cool for a couple of minutes before garnishing with freshly chopped parsley. Serve warm, with a dollop of sour cream or Greek yogurt if desired.
