4 medium-sized russet potatoes

1/2 cup unsalted butter (1 stick)

5 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)

1 teaspoon sea salt

1/2 teaspoon black pepper

1 tablespoon fresh parsley, chopped (for garnish)

Optional: grated Parmesan cheese for topping

Preheat and Prep: Preheat your oven to 425°F (220°C). Wash the potatoes thoroughly and pat them dry with a kitchen towel.

    Create the Hasselback Cuts: Place each potato on a cutting board. Position two wooden spoons or chopsticks on either side of the potato to act as a guide. Using a sharp knife, slice the potato thinly (about 1/8 inch apart), making sure not to cut all the way through. The chopsticks will prevent you from slicing too deeply.

      Prepare the Garlic Butter: In a small saucepan, melt the butter over low heat. Add the minced garlic, rosemary, sea salt, and black pepper. Stir to combine and allow it to infuse for about 2 minutes.

        Coat the Potatoes: Place the potatoes on a baking sheet lined with parchment paper. Using a basting brush, generously brush the garlic butter mixture over each potato, ensuring it seeps into the cuts. Reserve some of the garlic butter for later.

          Roast the Potatoes: Cover the baking sheet with aluminum foil and place it in the preheated oven. Roast for 30 minutes.
