1 lb (450 g) boneless, skinless chicken breasts, cut into bite-sized pieces

8 oz (225 g) cremini mushrooms, sliced

4 cloves garlic, minced

1/4 cup (60 g) unsalted butter

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

1/2 teaspoon paprika

Salt and pepper, to taste

1/4 cup (60 ml) chicken broth

Fresh parsley, chopped (for garnish)

Prepare Ingredients: Begin by prepping your ingredients. Cut the chicken breasts into bite-sized pieces, slice the mushrooms, and mince the garlic. This will make the cooking process smoother.

    Sear the Chicken: In a large skillet over medium-high heat, add 1 tablespoon of olive oil and 1 tablespoon of butter. Once hot, add the chicken pieces. Season with salt, pepper, paprika, thyme, and rosemary. Sear the chicken for about 5-7 minutes, until golden brown and cooked through. Remove the chicken from the skillet and set it aside.

      Cook the Mushrooms: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced mushrooms and sauté for about 4-5 minutes, until they are tender and browned. Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.

        Combine: Return the seared chicken to the skillet with the mushrooms. Pour in the chicken broth and add the remaining butter. Stir everything together, allowing the butter to melt and the flavors to meld, about 3-4 minutes.

          Taste and Adjust: Taste the mixture and adjust the seasoning, if needed, with more salt and pepper.
