The first step in achieving a perfect fruit pizza crust is creaming the butter and sugar together. This step is essential because it incorporates air into the mixture, resulting in a lighter, fluffier crust. Use room temperature butter for the best results. Begin by placing the softened butter and granulated sugar in a mixing bowl. Using an electric mixer on medium speed, beat them together until the mixture is pale and fluffy, which usually takes about 2-3 minutes. This process not only helps in achieving the right texture but also enhances the flavor of your crust.

Ingredients

For the Cookie Crust:

2 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 tsp vanilla extract

For the Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup powdered sugar

1 tsp vanilla extract

1 cup whipped topping (like Cool Whip)

For the Fruit Toppings:

1 cup strawberries, hulled and sliced

1 cup kiwi, peeled and sliced

1 cup pineapple, diced

1 banana, sliced

½ cup blueberries

½ cup raspberries

Optional: mint leaves for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Make the Cookie Crust:

      - In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.

        - In another bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.

          - Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.

            - Press the dough into a pizza pan or a large, lightly greased baking sheet, spreading evenly.

              Bake the Crust:

                - Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Remove from the oven and let it cool completely in the pan.

                  Prepare the Cream Cheese Frosting:

                    - In a medium bowl, beat the softened cream cheese with a hand mixer until smooth and creamy. Gradually add the powdered sugar, mixing until well combined.

                      - Stir in the vanilla extract and fold in the whipped topping until the mixture is light and fluffy.

                        Assemble the Pizza:

                          - Once the cookie crust is completely cooled, spread the cream cheese frosting evenly across the surface.

                            - Arrange the sliced fruit on top of the frosting in colorful patterns. Start with larger fruits like pineapple and kiwi, then add strawberries, banana slices, blueberries, and raspberries for a pop of color.

                              Garnish and Chill:

                                - Optional: Add fresh mint leaves on top for garnish.

                                  - Chill the fruit pizza in the refrigerator for at least 30 minutes before serving to allow flavors to meld.

                                    Serve and Enjoy:

                                      - Slice into wedges as you would with a pizza, and serve cold. Enjoy your Tropical Paradise Fruit Pizza!
