Ingredients

For the crust:

1 ½ cups graham cracker crumbs

1/3 cup granulated sugar

1/2 cup unsalted butter, melted

For the filling:

2 cups plain Greek yogurt (or vanilla yogurt for added sweetness)

1/2 cup honey or maple syrup (adjust based on yogurt choice)

1 teaspoon vanilla extract

2 cups fresh strawberries, hulled and sliced

1 tablespoon lemon juice

For the topping:

Whipped cream (optional, for serving)

Fresh mint leaves (for garnish, optional)

Instructions

Prepare the crust:

    - In a medium mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix well until the crumbs are evenly coated and resemble wet sand.

      - Press the mixture firmly into the bottom of a 9x9-inch square baking dish lined with parchment paper, ensuring it’s spread evenly across the bottom. Chill in the refrigerator for about 20 minutes while you prepare the filling.

        Make the filling:

          - In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Blend well until smooth.

            - In a separate bowl, toss the sliced strawberries with lemon juice. Allow them to sit for 5 minutes to macerate, which enhances their flavor.

              - Gently fold the macerated strawberries into the yogurt mixture, ensuring they are evenly distributed.

                Assemble the bars:

                  - Remove the crust from the fridge and pour the yogurt and strawberry mixture over the crust, spreading it evenly with a spatula.

                    - Cover the dish with plastic wrap and freeze for at least 4-6 hours, or until set.

                      Slice and serve:

                        - Once frozen, remove the dish from the freezer and let it sit at room temperature for about 5 minutes to soften slightly for easier cutting.

                          - Use a sharp knife to cut the frozen yogurt mixture into bars or squares. For cleaner cuts, you can briefly dip the knife in hot water and dry it before slicing.

                            - Serve the bars chilled, optionally topped with whipped cream and garnished with fresh mint leaves.

                              Store any leftovers:

                                - Place any leftover bars back into the freezer in an airtight container, separating layers with parchment paper if needed.
