Frozen Yogurt Raspberry Swirl Pops

Ingredients
  

2 cups plain Greek yogurt

1 cup fresh raspberries (plus extra for garnish)

2-3 tablespoons honey (adjust to taste)

1 teaspoon vanilla extract

1 tablespoon lemon juice

A pinch of salt

Popsicle molds

Wooden sticks (if molds don't come with them)

Instructions
 

Prepare the Raspberry Swirl: In a small saucepan, add 1 cup of fresh raspberries, lemon juice, and 1 tablespoon of honey. Cook over medium heat until the raspberries break down and form a sauce, about 5 minutes. Remove from heat and let it cool slightly.

    Blend the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, remaining honey (to taste), vanilla extract, and a pinch of salt. Mix well until smooth and creamy.

      Layer the Mixtures: Spoon a layer of the yogurt mixture into each popsicle mold, filling each mold halfway. Then, add a layer of the raspberry sauce on top of the yogurt layer. Use a skewer or knife to swirl gently, creating a marbled effect. Repeat until the molds are filled to the top.

        Insert Sticks: If your molds require sticks, insert them now. Ensure that they are centered and straight.

          Freeze: Place the popsicles in the freezer and let them freeze for at least 4-6 hours, or until solid.

            Unmold and Serve: To remove the pops, run warm water over the outside of the molds for a few seconds. Gently pull the pops out and serve immediately. Garnish with additional fresh raspberries if desired.
