Ingredients

2 cups plain Greek yogurt

1 cup fresh raspberries (plus extra for garnish)

3 tablespoons honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

1 cup granola (your favorite mix)

1 cup almond flour (or any flour of your choice)

1/4 teaspoon sea salt

1/4 teaspoon cinnamon (optional)

2 tablespoons coconut oil (melted)

1 banana (for added sweetness, optional)

Instructions

Prepare the Raspberry Yogurt Filling:

    - In a mixing bowl, combine the Greek yogurt, fresh raspberries, honey, and vanilla extract. Mash the raspberries lightly with a fork to create a swirl in the yogurt but leave some whole for texture.

      Make the Cookie Base:

        - In another bowl, mix the almond flour, sea salt, and cinnamon. Add the melted coconut oil and mashed banana (if using) to the dry ingredients. Stir until the mixture forms a dough. If it feels too dry, add a tiny bit of water until pliable.

          Form Cookies:

            - Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Scoop out tablespoon-sized portions of the dough and form into small discs, about 1/4 inch thick. Place them on the prepared baking sheet.

              Bake the Cookies:

                - Bake in the preheated oven for about 10-12 minutes, or until the edges turn lightly golden. Remove from the oven and allow them to cool on a wire rack.

                  Assemble the Sandwiches:

                    - Once the cookies are completely cool, take one cookie, add a generous spoonful of the raspberry yogurt filling, and top it with another cookie to form a sandwich. Press gently to secure the filling in place.

                      Freeze:

                        - Place the assembled sandwiches on a baking sheet lined with parchment paper. Freeze them for at least 2-3 hours or until firm.

                          Serve and Enjoy:

                            - Serve the frozen yogurt raspberry sandwiches directly from the freezer. Optionally, garnish with additional fresh raspberries on top for a delightful presentation.
