Ingredients

2 cups plain Greek yogurt

1 cup fresh pineapple chunks (or frozen)

1/4 cup honey or maple syrup (adjust to taste)

2 tablespoons chia seeds

1 teaspoon vanilla extract

1/4 teaspoon salt

Optional: Toasted coconut flakes and extra pineapple chunks for garnish

Instructions

Prepare the Pineapple: If using fresh pineapple, cut it into small chunks. If using frozen, let them thaw for a few minutes. In a blender or food processor, blend the pineapple until smooth. You can leave some small chunks for texture if desired.

Mix Yogurt Base: In a large bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, and salt. Stir until well combined.

Combine Ingredients: Gently fold the blended pineapple into the yogurt mixture. Add the chia seeds and mix until evenly distributed throughout the mixture.

Pour into Molds: Carefully pour the mixture into popsicle molds, leaving a little space at the top for expansion. If desired, sprinkle some extra pineapple chunks or toasted coconut flakes on top.

Insert Sticks: If your molds have lids, place them on top and insert the sticks. If not, wait for about 30 minutes until the mixture starts to freeze slightly, then insert the sticks into the center.

Freeze: Place the molds in the freezer for at least 4-6 hours or until completely frozen.

Unmold and Serve: To remove the pops, run warm water over the outside of the molds for a few seconds. Gently pull out the pops. Serve immediately, garnished with additional pineapple chunks or toasted coconut if desired.

Prep Time: 15 minutes | Total Time: 6 hours | Servings: 6 pops
