Ingredients
  

2 cups rolled oats

1 cup Greek yogurt (plain or flavored)

1/4 cup honey or maple syrup

1/2 cup almond milk (or any milk of choice)

1 ripe banana, mashed

1/2 cup mixed berries (fresh or frozen)

1/4 cup nut butter (peanut, almond, or sunflower seed)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

A pinch of salt

Optional toppings: chopped nuts, coconut flakes, chocolate chips

Instructions
 

Prepare the Base:

    - In a large mixing bowl, combine the rolled oats, honey or maple syrup, almond milk, mashed banana, yogurt, vanilla extract, ground cinnamon, and salt. Stir until everything is well incorporated.

      Add the Berries:

        - Gently fold in the mixed berries and nut butter until evenly distributed. If you're using frozen berries, there's no need to thaw them first; they'll add a delightful mix of textures.

          Prepare the Pan:

            - Line an 8x8 inch (20x20 cm) baking pan with parchment paper, leaving a bit of overhang on the sides for easy removal later. Lightly grease the parchment with non-stick spray or a thin layer of coconut oil.

              Fill the Pan:

                - Pour the oatmeal mixture into the prepared pan. Use a spatula to press it down evenly and compactly, ensuring there are no gaps.

                  Freeze the Bars:

                    - Place the pan in the freezer for at least 4 hours or until the mixture is firm and set.

                      Slice and Serve:

                        - Once set, remove the bars from the pan using the parchment overhang. Place on a cutting board and slice into squares or rectangles.

                          Store:

                            - Store the bars in an airtight container in the freezer for up to 3 months. For a quick snack, simply grab one from the freezer!
