Ingredients

For the Cherry Filling:

2 cups fresh or frozen cherries, pitted and halved

1/4 cup granulated sugar

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 tablespoon lemon juice

For the Crumble Topping:

1 cup rolled oats

1/2 cup all-purpose flour (or gluten-free alternative)

1/3 cup brown sugar

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/3 cup unsalted butter, melted (or coconut oil for a dairy-free version)

For the Yogurt Base:

2 cups Greek yogurt (plain or flavored)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

Instructions

Prepare the Cherry Filling:

    - In a medium saucepan over medium heat, combine the cherries, sugar, cornstarch, vanilla extract, and lemon juice.

      - Cook while stirring until the mixture starts to boil and thicken, about 5-7 minutes. If using frozen cherries, make sure they are heated through and the mixture is bubbling.

        - Remove from heat and let it cool slightly as you prepare the crumble topping.

          Make the Crumble Topping:

            - In a medium bowl, mix together the rolled oats, flour, brown sugar, cinnamon, and salt.

              - Pour in the melted butter (or coconut oil) and stir until the mixture resembles coarse crumbs.

                - Spread the crumble on a baking sheet lined with parchment paper and bake in a preheated oven at 350°F (175°C) for about 10-12 minutes, until golden brown. Let it cool completely.

                  Prepare the Yogurt Base:

                    - In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Mix well until the yogurt is smooth and creamy.

                      Assemble the Cups:

                        - In a serving cup or small glass, layer a spoonful of the cherry filling at the bottom.

                          - Scoop a generous layer of the yogurt mixture on top of the cherries.

                            - Finally, sprinkle a layer of the crumble topping over the yogurt.

                              Repeat the Layers:

                                - Repeat the layering process until all ingredients are used up, finishing with a layer of the crumble on top.

                                  Chill and Serve:

                                    - Place the assembled cherry crumble cups in the freezer for about 1-2 hours to chill slightly or until ready to serve.

                                      - Enjoy directly from the cup or let them thaw for a few minutes to soften before digging in!
