2 cups Greek yogurt (plain or vanilla flavored)

1/4 cup honey or maple syrup (adjust to taste)

2 teaspoons pure vanilla extract

2 tablespoons matcha powder (ceremonial grade for best flavor)

1/4 cup coconut milk (or any milk of your choice)

A pinch of sea salt

Fresh berries (blueberries, raspberries, or strawberries) for garnish (optional)

Silicone ice cube trays or mini muffin trays

Instructions
 

Prepare the Base: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of sea salt. Whisk until the mixture is smooth and well combined.

    Make the Matcha Mixture: In another small bowl, mix the matcha powder with the coconut milk until it becomes a smooth, lump-free paste. If needed, you can add a touch more coconut milk to achieve the desired consistency.

      Combine Mixtures: Slowly pour the matcha mixture into the yogurt base. Swirl gently with a spatula or spoon to create a marbled effect. Be careful not to completely blend them; the swirls add a beautiful appearance to the bites.

        Fill the Molds: Spoon the combined yogurt and matcha mixture into your silicone ice cube trays or mini muffin trays. Fill them to the top, ensuring a nice mix is visible on the surface for aesthetic appeal.

          Freeze: Place the trays in the freezer and let them sit for at least 4-6 hours or until they are completely frozen solid.

            Unmold the Bites: Once frozen, carefully pop the yogurt bites out of the trays. If they stick, you can let them sit for a minute at room temperature or run the bottom of the trays under warm water.
