1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

16 oz cream cheese, softened

½ cup granulated sugar

1 teaspoon vanilla extract

1 cup sour cream

1 cup fresh strawberries, pureed (plus extra for topping)

1 tablespoon lemon juice

For the topping:

½ cup fresh strawberries, sliced

2 tablespoons powdered sugar (optional)

Mint leaves for garnish (optional)

Instructions
 

Prepare the crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar until well combined. Press the mixture firmly into the bottom of a greased 9x9 inch baking pan to form an even layer. Bake in a preheated oven at 350°F (175°C) for 8-10 minutes or until lightly golden. Allow to cool completely.

    Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in the granulated sugar and continue to beat until well incorporated. Mix in the vanilla extract and sour cream until combined.
