Frozen S’mores Bars – No Campfire Needed!

Ingredients
  

1 cup graham cracker crumbs

1/4 cup unsweetened cocoa powder

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

2 cups mini marshmallows

1 cup milk chocolate chips

1 cup heavy cream

1 teaspoon vanilla extract

1/4 cup confectioners' sugar

Additional mini marshmallows and chocolate chips for topping (optional)

Instructions
 

Prepare the Base:

    In a medium bowl, mix together the graham cracker crumbs, cocoa powder, granulated sugar, and melted butter until well combined. The mixture should hold together when squeezed. Press it evenly into the bottom of a greased 8x8-inch baking dish to form the crust.

      Build the Marshmallow Layer:

        Evenly distribute the mini marshmallows over the graham cracker crust. Depending on your preference, you can layer them thick or sparse.

          Melt the Chocolate:

            In a double boiler or microwave-safe bowl, combine the milk chocolate chips and heavy cream. If using a microwave, heat in 30-second intervals while stirring until smooth. This chocolate ganache will serve as the decadent top layer.

              Combine the Chocolate and Marshmallows:

                Pour the melted chocolate ganache over the marshmallows, ensuring they are fully covered. With a spatula, gently spread the chocolate while keeping some marshmallows peeking through for added texture.

                  Make the Whipped Cream Topping:

                    In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form. Gradually add in the confectioners' sugar while continuing to whip until the cream is fluffy and holds stiff peaks. This will be your light and airy topping.

                      Assemble and Freeze:

                        Spread the whipped cream evenly over the chocolate layer, smoothing it out. For additional flavor and decoration, sprinkle extra mini marshmallows and chocolate chips on top if desired. Cover the dish with plastic wrap and freeze for at least 4 hours or until completely set.

                          Serve:

                            Once frozen, remove the dish from the freezer and let it sit for about 10-15 minutes to soften slightly for easier cutting. Slice into squares, serve, and enjoy the deliciousness of your frozen s’mores bars without the need for a campfire!
