Ingredients

2 cups fresh raspberries (or frozen, thawed)

1 ½ cups Greek yogurt (plain or vanilla)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

¼ cup granola (optional, for added crunch)

A pinch of salt

Instructions

Prep the Raspberries: If using fresh raspberries, rinse and gently pat them dry. If using frozen raspberries, allow them to thaw and drain any excess liquid.

Mix the Yogurt: In a mixing bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, and a pinch of salt. Stir until smooth and well-combined. Taste and adjust sweetness if necessary.

Combine & Fill: Gently fold the raspberries into the yogurt mixture, ensuring the berries are evenly distributed without mashing them too much.

Scoop into Molds: Using a small spoon or a piping bag, carefully scoop the raspberry yogurt mixture into silicone molds or mini cupcake liners. Fill them about ¾ of the way full to allow room for expansion when freezing.

Add Granola (Optional): If desired, sprinkle a small amount of granola on top of each yogurt bite for an added crunch.

Freeze: Place the filled molds on a baking sheet for stability and transfer them to the freezer. Freeze for at least 3-4 hours or until fully set.

Pop Them Out: Once frozen, remove the yogurt bites from the molds. If you’re using silicone molds, gently flex the sides to release them.

Enjoy & Store: Serve immediately or store in an airtight container in the freezer for up to 2 weeks. Enjoy as a refreshing snack on hot days or as a healthy dessert!
