Frozen Pumpkin Pie Bites with Crust

Ingredients
  

1 cup pumpkin puree

1/2 cup cream cheese, softened

1/4 cup powdered sugar

1 tsp vanilla extract

1 tsp pumpkin pie spice

1/2 tsp cinnamon

1 package (1 roll) refrigerated pie crusts (or homemade equivalent)

1 egg (for egg wash)

1 tbsp milk (for egg wash)

Optional: Whipped cream for serving

Instructions
 

Prepare the Pie Crust: If using refrigerated pie crusts, roll them out according to the package instructions. If making homemade crust, roll it out to about 1/8 inch thickness. Cut out small circles (about 2-3 inches in diameter) using a cookie cutter or a glass. You should get about 24 circles.

    Make the Filling: In a mixing bowl, combine the pumpkin puree, softened cream cheese, powdered sugar, vanilla extract, pumpkin pie spice, and cinnamon. Mix until smooth and well combined. Taste and adjust sweetness if needed.

      Assemble the Bites: Preheat your oven to 375°F (190°C). On a baking sheet lined with parchment paper, place half of the pie dough circles. Scoop about one tablespoon of the pumpkin filling onto the center of each circle.

        Top & Seal: Place the remaining pie dough circles over the filled circles and press the edges together to seal. Use a fork to crimp the edges for a decorative touch.

          Egg Wash: In a small bowl, whisk together the egg and milk. Brush the egg wash over the tops of the pumpkin pie bites to give them a golden color when baked.

            Bake: Bake in the preheated oven for about 15-18 minutes or until the bites are golden brown.

              Cool & Freeze: Allow the bites to cool completely on a wire rack. Once cooled, place them in a single layer on a baking sheet and freeze for about 1-2 hours. After freezing, transfer the bites to an airtight container or freezer bag for longer storage.

                Serve: Enjoy them frozen or let them sit at room temperature for a few minutes before serving. Serve with whipped cream if desired.
