2 cups fresh or frozen pineapple chunks

1 cup full-fat coconut milk (canned)

1/4 cup honey or maple syrup (adjust for sweetness)

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1 cup granola (for the base and topping)

1/2 cup shredded coconut (unsweetened, optional)

Fresh mint leaves (for garnish, optional)

Instructions
 

Prepare the Pineapple Mixture: If using frozen pineapple, thaw it slightly. Place the pineapple chunks in a blender or food processor along with half of the coconut milk, honey or maple syrup, vanilla extract, and salt. Blend until smooth and creamy.

    Make the Base: In a mixing bowl, combine the granola and the remaining coconut milk. Mix until the granola is fully coated. If desired, you may add the shredded coconut for extra texture.

      Assemble the Bars: Line a square baking dish (8x8 inches works well) with parchment paper, allowing some overhang for easy removal. Spread the granola mixture evenly on the bottom, pressing down firmly to create a base.

        Add the Pineapple Swirl: Pour the pineapple mixture over the granola base. Use a spatula to smooth it out evenly across the top. Using a knife or a skewer, gently swirl the mixture to create a marbled effect.

          Freeze: Cover the baking dish with plastic wrap or foil and place it in the freezer. Freeze for at least 4 hours, or until completely firm.
