2 cups fresh pineapple chunks (or frozen, if out of season)

1 cup coconut cream (not canned coconut milk)

1/2 cup coconut water

2 tablespoons honey or maple syrup (adjust sweetness to taste)

1 teaspoon vanilla extract

1/4 teaspoon salt

1/4 cup shredded unsweetened coconut, for garnish

Fresh mint leaves, for garnish

Instructions
 

In a blender, combine the fresh pineapple chunks, coconut cream, coconut water, honey (or maple syrup), vanilla extract, and salt. Blend until smooth and creamy, scraping down the sides if needed.

    Taste the mixture and adjust sweetness if desired by adding more honey or maple syrup.

      Pour the blended mixture into reusable silicone cups or a muffin tin lined with liners for easy removal later.

        Place the cups in the freezer and let them freeze for at least 4-6 hours, or until solid.

          Once the cups are frozen, remove them from their molds (if using a muffin tin, run hot water over the outside of the tin for a few seconds to help release them).

            To serve, let the cups sit at room temperature for 5-10 minutes to soften slightly. If desired, garnish with shredded coconut and fresh mint leaves.
