2 cups ripe peaches, peeled and chopped (fresh or frozen)

1 cup plain Greek yogurt

2 tablespoons honey or maple syrup (adjust sweetness to taste)

1 teaspoon vanilla extract

A pinch of salt

1/4 cup granola (optional, for topping)

Instructions

In a blender or food processor, combine the peeled and chopped peaches, Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt.

Blend the mixture until smooth and creamy. Taste and adjust sweetness as desired.

Line a mini muffin tin with paper liners or spray with a non-stick cooking spray.

Spoon the peach yogurt mixture into each compartment of the muffin tin, filling them about 3/4 full.

If desired, sprinkle granola on top of each yogurt bite for a delightful crunch.

Place the muffin tin in the freezer and let the yogurt bites freeze for at least 4-6 hours or until solid.

Once frozen, remove the yogurt bites from the muffin tin and store them in an airtight container in the freezer for later enjoyment.
