2 ripe bananas, mashed

1 cup plain Greek yogurt

1/4 cup unsweetened cocoa powder

1/4 cup honey or maple syrup

1 teaspoon instant coffee granules (optional)

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1 cup semi-sweet chocolate chips

1 tablespoon coconut oil

1/4 cup finely chopped nuts (optional, for coating)

1/4 cup shredded coconut (optional, for coating)

Prepare the Banana Mixture: In a large mixing bowl, combine the mashed bananas, Greek yogurt, cocoa powder, honey (or maple syrup), instant coffee granules, vanilla extract, and salt. Mix until smooth and well-combined.

    Shape the Truffles: Using a small cookie scoop or your hands, form the banana-yogurt mixture into small balls (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper.

      Freeze the Truffles: Place the baking sheet with the truffles in the freezer for at least 1 hour or until the truffles are firm.

        Melt the Chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until completely melted and smooth.

          Coat the Truffles: Remove the truffles from the freezer. Dip each frozen truffle into the melted chocolate, allowing any excess to drip off. If desired, roll the coated truffles in finely chopped nuts or shredded coconut before the chocolate sets. Place the truffles back on the parchment-lined tray.

            Final Freeze: Return the chocolate-coated truffles to the freezer to set for an additional 30 minutes.
