Frozen Mango Yogurt Bars

2 ripe mangoes, peeled and chopped

1 cup plain Greek yogurt

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 tablespoon lime juice

1 teaspoon vanilla extract

Optional: A pinch of sea salt

Optional: Chopped fresh mint for garnish

Prepare the Mangoes: In a blender or food processor, add the chopped mangoes and blend until smooth. If you prefer chunks, reserve some mango pieces to fold in later.

    Mix the Yogurt Base: In a mixing bowl, combine Greek yogurt, honey (or maple syrup), lime juice, vanilla extract, and the optional pinch of sea salt. Stir well until all ingredients are integrated.

      Combine Ingredients: Pour the blended mango puree into the yogurt mixture and gently fold until just combined. If using, fold in the reserved mango pieces for added texture.

        Pour into Molds: Line an 8x8 inch square baking dish with parchment paper for easy removal. Pour the mango yogurt mixture into the dish, spreading it evenly with a spatula.

          Freeze: Cover the dish with plastic wrap and place it in the freezer. Freeze for at least 4-6 hours or until firm.

            Slice and Serve: Once frozen, remove the dish from the freezer. Use the edges of the parchment paper to lift the block out. Place it on a cutting board and slice into bars.

              Garnish (Optional): If desired, sprinkle fresh chopped mint on top before serving.

                Enjoy: Serve immediately or store the bars in an airtight container in the freezer for up to one month.
