Ingredients

For the Crust:

1 cup graham cracker crumbs

2 tablespoons granulated sugar

4 tablespoons unsalted butter, melted

For the Cheesecake Filling:

8 oz cream cheese, softened

½ cup granulated sugar

1 teaspoon vanilla extract

Zest and juice of 2 limes

2 cups ripe mango, pureed (about 2 medium mangoes)

1 ½ cups whipped topping or heavy cream, whipped until soft peaks form

For the Garnish:

Fresh mango slices

Lime zest

Mint leaves (optional)

Instructions

Prepare the Crust:

    - In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are thoroughly coated.

      - Divide the crust mixture evenly among 8 small cups or ramekins, pressing down firmly with a spoon to create an even layer. Set aside.

        Make the Cheesecake Filling:

          - In a large bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

            - Gradually add the granulated sugar, vanilla extract, lime zest, and lime juice, mixing until fully incorporated.

              - Gently fold in the mango puree until well mixed, then carefully fold in the whipped topping (or whipped heavy cream) until just combined, ensuring the mixture remains light and airy.

                Assemble the Cups:

                  - Spoon the cheesecake filling on top of the prepared crusts, filling each cup nearly to the top.

                    - Smooth the tops with a spatula for an even finish. Cover each cup with plastic wrap and place them in the freezer.

                      Freeze:

                        - Freeze for at least 4 hours or until the cheesecake cups are completely set.

                          Serve:

                            - Once frozen, remove the cups from the freezer and let them sit at room temperature for about 5-10 minutes to soften slightly for easier eating.

                              - Garnish each cup with fresh mango slices, a sprinkle of lime zest, and a mint leaf if desired.

                                Enjoy:

                                  - Serve the Frozen Mango Lime Cheesecake Cups immediately and enjoy the burst of tropical flavors!
