Ingredients

2 cups plain Greek yogurt

1/4 cup honey (or maple syrup for vegan option)

1 tsp pure vanilla extract

1 tsp ground cinnamon

1/2 cup crushed whole grain cinnamon toast cereal (e.g., Cinnamon Toast Crunch)

1/4 cup chopped nuts (walnuts or pecans work well)

Fresh fruit for topping (berries, banana slices, etc.)

Mini cupcake liners

Instructions

In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and ground cinnamon. Stir until all ingredients are well combined and the mixture is smooth.

Line a mini muffin tin with cupcake liners to easily remove the frozen yogurt cups.

In each muffin liner, spoon a layer of the yogurt mixture until about halfway full.

Sprinkle a layer of crushed cinnamon toast cereal over the yogurt in each cup.

Continue layering the yogurt mixture and then another layer of the cereal until the liners are nearly full, finishing with a layer of yogurt.

Top each cup with a sprinkle of chopped nuts and a few pieces of fresh fruit.

Place the muffin tin in the freezer and let it freeze for at least 4 hours, or until fully set.

Once frozen, carefully peel the cupcake liners away from the yogurt cups.

Serve immediately or store the frozen yogurt cups in a zip-top bag in the freezer for up to two weeks.
