1 cup coconut milk (canned for creaminess)

1/4 cup honey or maple syrup

1 teaspoon pure vanilla extract

1/4 cup chia seeds

1/3 cup unsweetened shredded coconut

A pinch of sea salt

Dark chocolate (for drizzling, optional)

Instructions
 

In a mixing bowl, whisk together the coconut milk, honey or maple syrup, vanilla extract, and a pinch of sea salt until well combined.

    Stir in the chia seeds, making sure they are evenly dispersed throughout the mixture.

      Let the mixture sit for about 10-15 minutes. This allows the chia seeds to absorb the liquid and swell, creating a gel-like consistency.

        After the resting period, mix in the shredded coconut until well incorporated.

          Line a mini muffin tin or silicone molds with parchment paper or lightly grease them to prevent sticking.

            Spoon the chia mixture into each mold, filling them about three-quarters full.

              Tap the mold gently on the counter to remove any air bubbles and ensure the mixture is evenly distributed.

                Place the filled molds in the freezer and freeze for at least 4 hours or until solid.

                  Once frozen, gently pop the chia bites out of the molds (if necessary, run warm water on the outside for easier release).

                    If desired, melt some dark chocolate and drizzle over the top of the chia bites for a delicious touch.

                      Serve immediately or store the bites in an airtight container in the freezer for a quick snack!
