1 cup almond flour

1/2 cup rolled oats

1/4 cup coconut sugar

1/4 cup coconut oil, melted

2 tablespoons maple syrup

1/2 teaspoon vanilla extract

1/4 teaspoon salt

For the Peanut Butter Layer:

3/4 cup natural peanut butter (smooth or crunchy)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

Pinch of salt

For the Chocolate Layer:

1 cup dark chocolate chips (dairy-free if needed)

2 tablespoons coconut oil

Instructions
 

Prepare the Base:

    - In a medium mixing bowl, combine almond flour, rolled oats, coconut sugar, melted coconut oil, maple syrup, vanilla extract, and salt. Mix until all ingredients are well incorporated and form a crumbly dough.

      - Line an 8x8-inch (20x20 cm) baking dish with parchment paper, leaving some overhang for easy removal. Press the crust mixture into the bottom of the dish, ensuring it’s evenly spread and compacted. Refrigerate for about 15 minutes to firm up.

        Make the Peanut Butter Layer:

          - In a separate bowl, mix together the peanut butter, honey (or maple syrup), vanilla, and a pinch of salt until smooth. Spoon this mixture over the chilled base and spread evenly with a spatula. You can create swirls if desired.

            Prepare the Chocolate Layer:

              - In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until completely melted and smooth.

                Assemble the Bars:

                  - Pour the melted chocolate over the peanut butter layer, spreading it evenly with a spatula. Again, create swirls with a toothpick or knife if you want a marbled effect.

                    Freeze the Bars:

                      - Cover the dish with plastic wrap or foil and place it in the freezer for at least 2-3 hours, or until everything is solidified.

                        Slice and Serve:

                          - Once frozen solid, remove the bars from the dish using the parchment overhang. Cut into squares or rectangles and serve immediately. Store any leftovers in an airtight container in the freezer.
