Ingredients

1 cup almond flour

1 cup unsweetened shredded coconut

1/2 cup maple syrup or honey

1/4 cup melted coconut oil

1/2 cup almond butter

1 teaspoon vanilla extract

1/4 teaspoon salt

1 cup dark chocolate chips (vegan if desired)

1 tablespoon coconut oil (for chocolate coating)

Sliced almonds (for topping)

Sea salt (for garnish, optional)

Instructions

Mix Base Ingredients: In a large bowl, combine almond flour, shredded coconut, maple syrup, melted coconut oil, almond butter, vanilla extract, and salt. Stir until you have a well-mixed, sticky dough.

Shape the Squares: Line an 8x8 inch baking dish with parchment paper, leaving some overhang to easily lift out the finished squares. Press the coconut mixture evenly into the bottom of the dish, making sure it's compact. Smooth the surface with a spatula.

Freeze the Base: Place the dish in the freezer for about 30 minutes, or until firm.

Melt Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and 1 tablespoon of coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.

Coat the Squares: Once the base has set, remove it from the freezer. Lift the mixture out using the parchment overhang and place it on a cutting board. Cut it into squares or rectangles as desired. Dip each piece into the melted chocolate, ensuring it’s fully coated.

Add Almon Topping: After coating each square, place them back on the parchment-lined dish. Sprinkle with sliced almonds and a pinch of sea salt if using.

Freeze Again: Return the coated squares to the freezer for at least 30 minutes, or until the chocolate has hardened.

Serve: Once set, cut into squares if not already done, and serve immediately. Store leftovers in an airtight container in the freezer.
