Fresh or Frozen Blueberries Blueberries are the main attraction in this recipe, and whether you choose fresh or frozen, both options provide excellent nutritional benefits. Fresh blueberries are bursting with flavor and have a crisp texture, making them a delightful addition when in season. They are an excellent source of vitamin C, vitamin K, and manganese, as well as powerful antioxidants that support overall health. On the other hand, frozen blueberries are just as nutritious and often picked at peak ripeness, making them a convenient choice year-round. Their slightly softer texture when thawed also works well in recipes like this, where they are blended into a mixture.

Ingredients

2 cups fresh or frozen blueberries

1 cup plain Greek yogurt (or your favorite flavored yogurt)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 cup granola (choose your favorite blend for texture)

1 tablespoon lemon juice

Mini muffin or silicone bite-sized molds

Instructions

Prepare the Blueberry Mixture: In a medium saucepan over medium heat, combine the blueberries and lemon juice. Stir gently until the blueberries soften and begin to burst, about 5-7 minutes. Remove from heat and allow to cool slightly.

Blend the Yogurt Base: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until smooth. Adjust sweetness, if necessary.

Combine Ingredients: Once the blueberry mixture is slightly cooled, fold it into the yogurt mixture gently to create a marbled effect. Do not fully blend; you want to see streaks of blueberry throughout.

Assemble the Bites: Spoon or pipe a layer of the yogurt-blueberry mixture into the mini muffin molds, filling each about halfway. Top with a sprinkle of granola for added crunch.

Freeze: Place the molds in the freezer for at least 2-3 hours or until fully frozen.

Release the Bites: Once frozen, carefully remove the pie bites from the molds. They should pop out easily if you are using silicone molds.

Serve and Enjoy: Arrange the frozen blueberry yogurt pie bites on a serving platter or store in a zip-lock bag in the freezer for later enjoyment. Enjoy these as a cool treat on a warm day!
