2 cups plain Greek yogurt

1 cup fresh or frozen blueberries (thawed)

1/4 cup honey or maple syrup

1 scoop vanilla protein powder

1 teaspoon vanilla extract

1 tablespoon lemon juice

Pinch of salt

1/4 cup sliced almonds or granola (for topping, optional)

Instructions
 

In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), protein powder, vanilla extract, lemon juice, and a pinch of salt. Whisk until the mixture is smooth and all ingredients are well incorporated.

    Gently fold in the blueberries, being careful not to break them too much, as you want to have whole pieces for texture.

      Line a baking sheet or a shallow dish with parchment paper for easy removal.

        Pour the yogurt mixture onto the lined baking sheet and spread it evenly into a rectangle about half an inch thick.

          If desired, sprinkle sliced almonds or granola evenly over the top for added crunch.

            Place the baking sheet in the freezer and let it freeze for at least 4 hours, or until completely solid.

              Once frozen, remove the yogurt slab from the baking sheet and peel off the parchment paper.

                Using a sharp knife, cut the frozen yogurt slab into slices or squares as desired.

                  Return the slices to the freezer if not serving immediately, and enjoy anytime you need a refreshing protein-packed snack!
