Frozen Blueberry Lemon Bars

1 ½ cups fresh or frozen blueberries

1 ½ cups all-purpose flour

1 cup granulated sugar, divided

½ cup unsalted butter, melted

2 large eggs

⅓ cup freshly squeezed lemon juice (about 2-3 lemons)

Zest of 1 lemon

½ teaspoon baking powder

¼ teaspoon salt

½ teaspoon vanilla extract

Optional: powdered sugar for dusting

Prepare the baking pan: Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan and line it with parchment paper, leaving some overhang for easy removal later.

    Make the crust: In a medium bowl, combine the melted butter, ¼ cup granulated sugar, and 1 cup of flour. Mix until crumbly. Press this mixture firmly into the bottom of the prepared pan to form the crust. Bake for 15 minutes, then remove from oven and set aside to cool slightly.

      Prepare the filling: In a large bowl, whisk together the remaining ¾ cup of granulated sugar, ½ cup of flour, baking powder, and salt. Add the eggs, lemon juice, lemon zest, and vanilla extract. Whisk until smooth and well combined.

        Add blueberries: Gently fold in the blueberries, being careful not to crush them.

          Combine and bake: Pour the blueberry filling over the cooled crust. Bake in the preheated oven for an additional 20-25 minutes, or until the filling is set and the edges are slightly golden.

            Cool and freeze: Remove from the oven and allow to cool completely at room temperature. Once cooled, cover the pan and place in the refrigerator for at least 2 hours to chill. If you prefer them frozen, you can freeze them for an additional 1-2 hours until firm.

              Serve: When ready to serve, remove the bars from the pan using the parchment overhang. Cut into squares and dust with powdered sugar, if desired. Serve chilled or frozen for a refreshing treat!
